Hello Vickie, does your scanner asks you after scan the file where you want it to be saved? if not, then check your scanner file saving setting. this must be inside prefrences or general setting option

Better not to make any text version in a Phosotoshop because it is a raster based software. if you really want to add and edit your stuff later even in PDF, try making it MS Word or InDesign. Illustrator
