Love the place, much visited and now living in Crete. As I'm creating the greatest website about any destination......but, about Greece, your questions help me learn more about what people need and want to know.
What information people really need when they travel, what helps anyone get a richer, more delight-filled experience of their visit, wandering or holiday/vacation.
There are lakes and you can (at a pinch) even ski in Crete! Vines in Santorini are grown in a circular swirl on the ground, not typically upright, so as to grab moisture and be protected against island winds.
The famed Cretan Kri-Kri (like a goat) is almost non-existent, if you are served this as a dish in a restaurant - ask some detailed questions to try and make sure it's the real thing (perhaps you might be concerned at helping to make such a creature extinct?)

I would advise against planning this rail journey. I would suggest flying or travelling by car. Trains for Thessaloniki normally depart from the Larissis station (same one you were trying to find)
Alaana Good. I really don't think there is anything especially helpful that is local in Crete (any listing or advertising in a local paper will leave it very hard to know much about who you are sharing
