EDITED AFTER COFFEE Well, the temp sensor is a thermistor (higher temp causes a higher electrical resistance in a THERMistor). Looks like either the thermistor is faulty or there's some extra resistance
They are known for fouling the throttle body/duct with oil. Only thing you can do is remove any oily parts, clean with carb cleaner. run the engine and spray carb cleaner (with the intake fully assembled)
You're looking at - maladjustment (if adjustment is possible) - Worn bushes - Bent component/s - bent body mountings for suspension components.
