What do you like about this subject?

It is impossible to predict what the next bottle to value will be, I have valued 1812 cognacs, Gallons of Navy/Military Rum, wines from the beginning of the last Century, as well as more up to date bottles.

What do you still hope to achieve/learn in this field?

It is impossible to stop learning with this subject, and the more searching and research I have to do, the more knowledge I gain.
