Billy, You may want to check with some local universities, they may have business incubator programs that will help get you started. Also try SCORE which is an organization where retired execs. help small
Mary, You may want to try contacting someone at USDA's Economic Research service http://www.ers.usda.gov/ The Census of Manufacturing Industries may also help get you a ballpark # http://www.census
