I would double check with who you booked the cruise with. Every cruise line has a guideline as to when the last flight in will be able to make the ship and this should be your worst case scenario.
Depending on your timing, this is completely feasible. On the Queen Mary 2, the crossing takes 6 days to Southhampton and then it is just a short ride to Dover once there. Cunard line would be the fastest
