Expertise

I'm very inventive and can improvise ingredients when the ones called for are not on hand. Baking cookies, pies, muffins and squares are my favorite, but have not perfected yeast breads. I'm skilled at home cooked meals and have a talent for making flavorful meals with spices and can stretch them for many people.

Experience in the area

I've worked in bakeries and taken courses, but most of my experience came from experimenting and cooking at home for my family. I have a huge cookbook collection and enjoy reading them and modifying the recipes.

Education/Credentials

Cooking courses as well as nutrition, food safety and diet modifications.

Don, so sorry for the delay in answering. Things have been hairy around here. It sounds like she's using the correct ingredients but I suspect she's overcooking the potatoes because they do get pasty

2008-03-13 tooo much sugar:

You got it. Add more vinegar a bit at a time. I don't know what's in the chili sauce either but I simply add chili powder until I like the taste and water down the ketchup. Good luck at lunch tomorrow
